This week we welcomed the first day of spring. In the United States, spring is associated with warmer weather, St. Patrick’s Day and Easter.
Other countries around the world have great celebrations to welcome spring. In India they celebrate Holi, in Bosnia they celebrate Cimburijada, in Europe they celebrate Walpurgis Night, in Spain they celebrate Las Fallas
and in Uzbekistan they celebrate Navruz.
Navruz, also known as Persian New Year, is a treasured holiday. Celebrated on March 21, it is a day to enjoy good food with friends and family. At CHI we celebrated Navruz by enjoying a traditional Uzbek dish called, Plov. Plov, also known as Osh, is usually made with rice, pieces of meat, grated carrots and onions and is cooked over an open fire. Chickpeas, raisins, or fruit may be added for variation.
